The following recipe is for 2 people.

Thai Green Curry
2 chicken breasts, diced or sliced on the diagonal into thin strips
( you can replace this with beef, lamb or tofu, if you use tofu, don't add it until after the vegetables ).
2 tbsp of This Green Curry Paste
2 tbsp vegetable oil
Light soy sauce - you'll know how much you need when you taste it!
1/2 can of Organic Coconut milk - don't be tempted to use 'low fat' coconut milk as it makes this recipe slimy and quite unpleasant!
10 broccoli florets
1 green pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
2 servings of another green vegetable or mushrooms. I tend to use whatever is in the fridge - courgette is good, fine green beans, mange tout, finely shredded savoy cabbage or your favourite green vegetable!
Equipment is important here, sharp knives are a must and a wok or heavy based pan will make it cook more effectively.
Heat the wok, without oil, for a minute or so to until it begins to smoke, add the vegetable oil and make sure the surface shimmers before adding your chosen meat. stir-fry the meat until well cooked.
Add the curry paste and continue to fry for around 30 seconds, you don't want this to burn so use your judgement. Then add around 2 tablespoons of coconut milk to stop it all catching.
Chuck in all the vegetables and stir fry for about a minute then add the rest of the coconut milk and bring it to the boil. Turn down the heat and simmer for around 2 minutes until the vegetables begin to soften.
At this point, if you like it hotter, add some chilli oil and then add some Light Soy Sauce, don't be tempted to add Dark Soy Sauce as you'll end up with Thai 'Brown' curry, which still tastes ok, but it looks a little disgusting!
Stir for a minute or so and then serve with Brown Rice, White Rice or Noodles, whichever is your favourite.
